Yolfer, Dahayanna and Donny Carvajal are the powerhouse brother-and-sister team behind Pabade Bakery, the supplier of the vegan muffins and (crack) brownies for our Uptown Grand Central pop-up shop. After growing up in Venezuela and Colombia, then immigrating to the United States, the siblings began baking in the wee hours of the morning at East Harlem's own Hot Bread Kitchen small business incubator, all while each holding down other jobs. The family has a special commitment to offering vegan and low-sugar options, inspired by the fact that Yolfer has diabetes and must inject insulin daily. In January 2018, they opened their very first storefront on East 110th Street: Drop by for a vegan muffin, slice of pound cake, or alfajores (cookie with dulce de leche).
