Yolfer Carvajal is Venezuelan, grew up in Colombia, and attended French culinary school. After immigrating to the United States in 2011, he looked for places to fulfill his dream of becoming a French pastry chef -- and ended up at East Harlem's own Hot Bread Kitchen incubator kitchen! Yolfer loves to experiment with new ingredients and flavors, and most recently has piloted the vegan and gluten-free muffins we serve up on weekday afternoons at 125th Street & Park Avenue at the pop-up shack shop. Where did he get the name "Pabade?" PAstries + BAkery + DEsserts, of course!
